Folded Egg Sandwich

Ingredients

  • 2 brioche bread slices
  • 2 eggs
  • 1 slice of Gouda cheese
  • 1/2 avocado sliced or mashed
  • A handful of arugula
  • A few cherry tomatoes halved
  • Butter for toasting the bread
  • Salt and pepper for seasoning

Instructions

  • Crack and Whisk the Eggs
  • Heat the Pan and Melt the Butter
  • Pour Eggs into the Pan
  • Place the Bread on Top of the Eggs
  • Flip the Egg and Bread Together
  • Add Gouda Cheese, Avocado, Tomatoes, and Arugula
  • Fold the Sandwich
  • Serve and Enjoy!
